In a large pot (or if you don't mind more cleaning, you can use a separate skillet), heat olive oil over medium-high heat.
Mix beef stew meat and season with onion powder, garlic powder, salt, and pepper. Until well combined. Then add to pot/pan.
Sauté for 3-5 minutes until beef is seared on all sides. If skillet was used, transfer to pot using same heat settings.
Pour in French onion soup and beef broth. Bring to a simmer, then let the beef cook on low for 10 minutes.
Add egg noodles to the pot and continue to simmer for an additional 10 minutes, stirring occasionally, until noodles are tender.
Remove the pot from heat. Stir in sour cream and Parmesan cheese until well combined.
Optional: Sprinkle French fried onions before serving. Goes well with either a green salad or steamed vegetables.
