South African Pumpkin Fritters

Wonderful as a breakfast item or as a snack.

Ingredients

  • 2 cup pumpkin Cooked (see notes below)
  • 0.5 cup flour All-purpose
  • 0.5 teaspoon salt
  • 1 teaspoon cinnamon
  • 2 teaspoon baking powder
  • 2 tablespoon brown sugar or white sugar
  • 2 eggs large
  • vegetable oil for frying
  • cinnamon sugar optional

Instructions

  • Put all of the dry ingredients in a mixing bowl (kitchen aid or other food processor) and mix well
  • Add the eggs, and mix until a thick batter forms. The batter should almost hold its shape when tested with a spoon
  • If the batter is too stiff, add a tiny amount of milk. If, by any chance it is runny, add more flour (shouldn't happen!)
  • Heat oil in pan using a medium to high heat to start
  • Scoop up heaped tablespoons of batter and drop into pan. Make sure they are spread out so they don't touch each other. The fritters won't be too large as some of the batter will stick to spoon.
  • Fry until firm and golden on the underside, then flip over and fry other side.
  • Serve warm. You can sprinkle some cinnamon sugar or confectioners sugar over them for extra flavor.

Notes

Best way to prepare the pumpkin is to boil it until very soft. You can then either puree it or add straight to the batter if it is soft enough so that it mixes well in the batter.
