Johnny cakes

Who doesn't love Johnny cakes? Easy to make, and absolutely delicious!

Equipment

  • Deep fryer or pot with oil

Ingredients

  • 500 grams flour All-purpose
  • 1 sachet baking powder
  • 2 tablespoon brown sugar
  • 1 teaspoon salt
  • 3 tablespoon butter melted
  • 1 cup water
  • 1 cup milk

Instructions

  • Add 3 tablespoons of butter to a bowl and melt it in microwave for 1 minute
  • Sift flour and baking powder into mixing bowl
  • Add salt and brown sugar
  • Add butter to mixture
  • Using a bread hook in kitchen machine (KitchenAid or otherwise), add butter and then mix on low speed.
  • Add water and milk on a 1:1 ratio in 1/4 cup amounts at a time until dough is no longer powder and not quite sticky. Unfortunately, there is no exact amount of water or milk for this. It must be done by feel. Each time you add water/milk wait a minute while it mixes in. If too much water was added and it gets sticky, simply add in more flour.
  • Can be fried immediately, or left to rise for max an hour. Cut small pieces and roll them into balls, then using roller pin or substitute, roll flat and fry until golden brown. Let dry on paper towels to allow grease/oil to drain off.

Notes

To make paté/pastechi, you can follow this video example on how to fold the dough to seal the contents from leaking.
For better results, you can add 1 tablespoon butter and 2 tablespoons of Crisco shortening. When putting in microwave to melt, add approx 30 seconds to allow shortening to melt through.
