Carrot Cake

Caribbean style Carrot Cake. Delicious and healthy at the same time.

Ingredients

  • 1 1/2 cup sugar
  • 1 cup vegetable oil
  • 3 egg large
  • 2 cup flour All-purpose
  • 1/2 teaspoon cinnamon
  • 1 tablespoon vanilla extract
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/4 teaspoon nutmeg
  • 3 cup carrot shredded
  • 1 cup walnuts chopped or pureed
  • 1/2 cup raisins optional

Instructions

  • Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x13 inch pan.
  • In a large bowl, beat together eggs, oil, white sugar and 2 teaspoons vanilla.
  • Mix in flour, baking soda, baking powder, salt and cinnamon.
  • Stir in carrots (and raisens if preferred). Fold in walnuts (can use nuts of preference as replacement).
  • Pour into prepared pan.
  • Bake in the preheated oven for 40 to 50 minutes, or until a toothpick inserted into the center of the cake comes out clean.
  • Tastes great with a whipped cream frosting (see Notes for whipped cream frosting)

Notes

Optional recipe for frosting from AllRecipes.com:

1/2 cup butter (softened)
8 ounces (or one package) of cream cheese, softened
4 cups confectioners/powdered sugar
1 teaspoon vanilla extract
1 cup sliced almonds or pecans
To Make Frosting: In a medium bowl, combine butter, cream cheese, confectioners' sugar and 1 teaspoon vanilla. Beat until the mixture is smooth and creamy. Stir in almonds/pecans. Frost the cooled cake.
