Carrot Cake
Caribbean style Carrot Cake. Delicious and healthy at the same time.
Servings: 8 people
Ingredients
- 1 1/2 cup sugar
- 1 cup vegetable oil
- 3 egg large
- 2 cup flour All-purpose
- 1/2 teaspoon cinnamon
- 1 tablespoon vanilla extract
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1/4 teaspoon nutmeg
- 3 cup carrot shredded
- 1 cup walnuts chopped or pureed
- 1/2 cup raisins optional
Instructions
- Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x13 inch pan.
- In a large bowl, beat together eggs, oil, white sugar and 2 teaspoons vanilla.
- Mix in flour, baking soda, baking powder, salt and cinnamon.
- Stir in carrots (and raisens if preferred). Fold in walnuts (can use nuts of preference as replacement).
- Pour into prepared pan.
- Bake in the preheated oven for 40 to 50 minutes, or until a toothpick inserted into the center of the cake comes out clean.

Optional recipe for frosting from AllRecipes.com:
1/2 cup butter (softened)8 ounces (or one package) of cream cheese, softened
4 cups confectioners/powdered sugar
1 teaspoon vanilla extract
1 cup sliced almonds or pecans To Make Frosting: In a medium bowl, combine butter, cream cheese, confectioners' sugar and 1 teaspoon vanilla. Beat until the mixture is smooth and creamy. Stir in almonds/pecans. Frost the cooled cake.
