French Onion Beef and Noodles

Equipment

  • 1 Large pot

Ingredients

  • 2 tbsp Olive oil
  • 800 g Beef Stew meat. The supermarket often sells beef specific for stewing. If not, see additional notes below for softening the meat.
  • 1 tsp Onion powder
  • 1 tsp Garlic powder
  • Salt & Pepper to taste
  • 1 can French Onion Soup 10.5 ounces or 300g
  • 3 cups beef broth Follow directions on broth for use. If added directly without following directions, it can come out very salty. Often, directions indicate to add a certain amount of water per cup.
  • 1 pkg Egg noodles
  • 1/2 cup sour cream
  • 1/4 cup Parmesan cheese

    Can be bought or can be made in advance and stored.

Instructions

Optional: Soften the meat

  • To prevent beef from being tough to eat, you can do what Asians call "velveting" the meat. Put the meat in a mixing bowl and add 2-3 tbsp of baking soda and leave sit for 20-30 minutes.
  • Rinse thoroughly and let dry on paper towels or kitchen towel.

Cook:

  • In a large pot (or if you don't mind more cleaning, you can use a separate skillet), heat olive oil over medium-high heat.
  • Mix beef stew meat and season with onion powder, garlic powder, salt, and pepper. Until well combined. Then add to pot/pan.
  • Sauté for 3-5 minutes until beef is seared on all sides. If skillet was used, transfer to pot using same heat settings.
  • Pour in French onion soup and beef broth. Bring to a simmer, then let the beef cook on low for 10 minutes.
  • Add egg noodles to the pot and continue to simmer for an additional 10 minutes, stirring occasionally, until noodles are tender.
  • Remove the pot from heat. Stir in sour cream and Parmesan cheese until well combined.
  • Optional: Sprinkle French fried onions before serving. Goes well with either a green salad or steamed vegetables.
