Golden Fluffy Pancakes
Who doesn't like fluffy American "Aunt Jemima" pancakes? Some thick maple syrup over them, maybe some eggs as well... Breakfast never got that good.
Servings: 8 pancakes
Ingredients
- 1.25 cup flour all-purpose or "patent bloem" (for the Dutch visitors)
- 2.5 tablespoon brown sugar
- 0.75 teaspoon salt
- 2 teaspoon baking powder
- 1 unit egg
- 1.33 cup milk
- 3 tablespoon vegetable oil
Optional:
- 1 teaspoon vanilla extract
- 2-3 drops pear extract
- 1-2 dashes nutmeg
- 1 teaspoon cinnamon
- 1-2 dashes ground ginger
Instructions
- In a small bowl, whisk milk, egg and oil together. (Optional: If you want them to taste even better, add the vanilla and pear extracts as well. Be GENTLE with the Pear extract, as it is VERY STRONG!)
- In a larger bowl, combine all dry ingredients.
- Slowly add liquid mixture to dry mixture and whisk well.
- Spray large frying pan with cooking spray or add a little bit of vegetable oil, and heat to medium heat. On a ceramic cooking stove, I have it between 4 and 5 (out of 10).
- Wait until pan gets nice and hot.
- Make pancakes whatever size you wish-- allowing top to form bubbles before turning over.
- Cook until both sides are golden brown.
- These can be frozen and toasted in the toaster to be reheated.
