Cuisine: Caribbean
Servings: 1 loaf

Ingredients

  • 1/2 cup butter melted or liquid butter
  • 1 teaspoon baking soda
  • 1 cup brown sugar Original recipe calls for white sugar, but I find brown sugar gives it a nicer taste
  • 1/2 teaspoon salt
  • 2 eggs large
  • 1/2 cup sour cream
  • 1 teaspoon vanilla extract
  • 1/2 cup walnuts You can chop them. I use a blender to pulverize them
  • 1 1/2 cup flour all-purpose
  • 3 banana The riper the bananas, the better.

Instructions

  • Pre-heat oven to 350 degrees F or 175 degrees C. Grease a bread pan. I use a silicone bread form, which does not require greasing.
  • In a mixing bowl, mix together the melted butter and sugar. Add the eggs and vanilla, and mix well. If using a kitchen machine, such as a KitchenAid, use the whisk attachment.
  • If using a kitchen machine, such as a KitchenAid, switch to the mixing attachment. Using a sifter, add in the flour and baking soda, then add in the salt. Mix into the batter until smooth
  • Now add in the sour cream, walnuts and bananas.
  • Pour batter into bread form.
  • Bake at 350 degrees F or 175 degrees C for 60 minutes, or until a toothpick inserted into the center comes out clean. Leave cool for about 10 minutes.

Notes

Each person has preferences how they like their banana bread. I tend to use a blender to pulverize the walnuts and the bananas and add to mixture. Some like chunkier banana pieces in the bread. Try different ways until you find one that appeals to you.
Different ideas to try with the bread:
You can try adding blueberries to the batter for extra flavor. I've never done it, but have heard positive reviews about it. Leave a comment below on your experience with it.
Tastes great as a desert when it is still warm with a small scoop of ice cream or whipped cream.
