Wonderful as a breakfast item or as a snack.

Ingredients

  • 3 banana soft and ripe
  • 1 egg large
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/2 cup sugar granulated (white or brown). I prefer brown
  • 2 cup flour all-purpose
  • 1 tablespoon baking powder
  • 1/4 cup milk

Instructions

  • Peel and mash the ripe bananas. Can also puree in blender or magic bullet
  • Beat eggs, vanilla, cinnamon and numeg
  • Blend egg mixture with mashed bananas. Make sure it is well incorporated
  • Sift flour and baking powder into the banana/egg mixture. Mix it all together. If the batter seems to be too thick, add a little milk. Batter should be same consistency as pancake batter. I added about 1/4 to 1/2 cup milk.
  • Add a little oil to a frying pan and place on medium high heat. Drop spoonfuls of banana fritter batter into the hot oiled frying pan. Flip when you see the edges starting to get brown and golden

Optional:

  • Mix sugar and 1/2 teaspoon cinnamon together. Sprinkle over fritters while they are still hot.
